Coconut Cream Pie

Pie is huge here in the USA but not as we know it in the uk. Pie here is sweet and delicious. I was so excited at thanksgiving when I made my first sweet potato pie and pumpkin pie. But here in Miami, a super popular pie is coconut cream pie. Give this recipe a try and you will soon understand why!

Flaky Cheddar Biscuits

So the Americans call biscuits what we would be more likely to call a scone in the UK or if placed into a stew of some-kind, maybe a dumpling. As with scones, they can be both sweet or savoury – but they are super popular here. This cheddar scone is wonderful served with manchego cheese and prosciutto or my favourite of brie and caramelised red onions.

Roasted Artichokes with Parmesan Crisp

My love for artichokes first blossomed when we lived in Valencia in Spain and I ate them every single day. Now we have moved to Miami, I am reigniting that love as they are so readily available and so so delicious. This is a great dish to place in the centre of the dinner table and let everyone share.

Lentil Bolognese

The struggle to go meat free will be over when you taste this delicious lentil bolognese. Rich and satisfying. Load onto a jacket potato and serve with salad or in the usual way of just over a deep bowl of pasta.
