Grilled Peach Delight

Taking peaches to a whole new level of deliciousness. Grilling them enhances their sweet flavour. This makes a perfect breakfast or light summer dessert to share with friends and family.

Ingredients

  • 6 peaches
  • 2 tbsp runny honey
  • 75 gr crunchy granola
  • 1 handful goji berries
  • zest and juice of half an orange
  • olive oil
  • plain Greek yoghurt

Instructions

  • Slice the peaches into segments.
  • Heat a griddle pan on a high heat.
  • Brush both sides of the peaches with a little olive oil then place into the hot griddle. They will sizzle immediately.
  • Place the honey and orange juice and zest into a small saucepan and heat until boiling then turn down the heat, stir for a minute or two then remove from the heat.
  • After a couple of minutes turn the peach slices over to griddle on the other side.
  • Take a large serving platter and place the griddled peaches down first. Drop the 
  • Greek yoghurt over the peaches, sprinkle with the granola then pour over the sweet sauce.
    Top with the goji berries and enjoy!
