Preheat the oven to 220ºc.
Cut the potatoes into wedges then soak them in iced water for around 30 minutes. This removes some of the starch and results in a super crispy potato wedge.
Drain and dry thoroughly.
Place the wedges in a bowl and drizzle with olive oil (a couple of tablespoons) then add in the paprika and onion powder and season with salt and pepper.
Lay out on a large baking sheet and place in the oven for around 40-45 minutes until golden and tender.
