Spicy Fried Tofu
This is the quickest weeknight dinner packing a punch of flavour – vegan never was easier.

Ingredients
250
gr
hard tofu
1
inch
piece fresh ginger
½
tsp
cumin powder
3
tbsp
tamari
olive oil
1
tbsp
fresh coriander chopped
Instructions
Cut the tofu into cubes.
Grate the ginger then add to a bowl with the tamari, cumin and coriander.
Leave to marinate for at least 15 minutes.
Heat a large pan over a medium/high heat and cover the base with olive oil then fry the tofu until crisp and golden.
Serve with sautéed red onions and sugar snap peas.
