Bacon Roasted Brussels Sprouts

Golden, crispy Brussels sprouts roasted with smoky bacon and a splash of tangy red wine vinegar. This side dish is so good it might just steal the spotlight.

Ingredients

  • 2 lb Brussels sprouts trimmed and halved (900g)
  • 1 red onion cut into thin wedges
  • 6 slices thick-cut bacon cut into strips
  • 2 tbsp red wine vinegar
  • 1 tsp dried thyme
  • ½ tsp salt

Instructions

  • Preheat the oven to 400ºF / 200ºC degrees.
  • Heat a skillet over medium heat and cook the bacon until the fat has rendered and it is crispy.
  • Remove the bacon to a plate lined with kitchen paper.
  • Add the brussels sprouts and onion wedges to the skillet, season with salt and thyme, and toss well to coat in the bacon fat.

  • Lay the sprouts and onion wedges onto a large baking sheet. Roast in the oven for 30 minutes until tender and golden.
