Preheat the oven to 350ºF / 180ºC degrees and line a muffin tin with paper liners.
In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
Add the wet ingredients to the dry ingredients and stir until just combined — don’t overmix.
Fold in the chopped apples and caramels.
Use an ice cream scoop to divide the batter evenly between the 12 muffin cups.
In a small bowl, mix together all topping ingredients and sprinkle over each muffin.
Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
These are delicious served warm with a scoop of vanilla ice cream.
