2springsfresh thyme

Instructions
Heat a few tablespoons of olive oil in a wide-bottomed pan over medium heat. Sauté onions, carrots, and celery for about 10 minutes until soft
Stir in chickpeas, followed by passata, and mix well.
Add thyme sprigs and season with salt and pepper.
Simmer for 45 minutes until the vegetables soften, and the sauce reduces by two-thirds.
Serve with lentil rice or your preferred rice variety.
