Mix together the cottage cheese, eggs, syrup, milk, and vanilla extract.
In a separate bowl mix together the dry ingredients of flour, baking powder, and salt.
Add the dry ingredients into the wet ingredients and stir until the flour is no longer visible. If the mixture is too thick, add a little more milk.
Grease a skillet and heat over medium heat. Using a ¼ cup measure, scoop the batter into the skillet.
Allow to cook for a few minutes on one side and once set and golden on the underside, use a spatula to flip to cook the other side.
Serve immediately with fresh berries and maple syrup or go savory with bacon and scrambled eggs.
