Cottage cheese pancakes

Imagine all the comfort of classic pancakes, but with a boost that keeps you going long after breakfast is over. Whether you top them with fresh berries and syrup or go savory with crispy bacon and eggs, these pancakes are as versatile as they are delicious.

Ingredients

  • 1 cup all-purpose flour 120g
  • 1 cup cottage cheese 225g
  • ½ teaspoon vanilla extract
  • 2 eggs
  • 2 tablespoons maple syrup 30ml
  • 1 teaspoon baking powder
  • ¼ cup whole milk 60ml
  • Pinch of salt

Instructions

  • Mix together the cottage cheese, eggs, syrup, milk, and vanilla extract.
  • In a separate bowl mix together the dry ingredients of flour, baking powder, and salt.
  • Add the dry ingredients into the wet ingredients and stir until the flour is no longer visible. If the mixture is too thick, add a little more milk.
  • Grease a skillet and heat over medium heat. Using a ¼ cup measure, scoop the batter into the skillet.
  • Allow to cook for a few minutes on one side and once set and golden on the underside, use a spatula to flip to cook the other side.

Notes

 
  • You can substitute the bananas with berries for a different twist.
  • Serve with extra chocolate sauce and whipped cream for that extra indulgence.
  • Keep the pancakes warm in the oven while you cook the rest!
