Preheat the oven to 375 degrees F
Grease and line two round cake tins
Sift the flour into the bowl of an electric mixer then add in the sugar, softened butter, vanilla extract and eggs.
Divide the mixture evenly between the cake pans and smooth the top.
Place the pans into the oven and bake for around 30 minutes until a toothpick comes out clean when inserted into the center of the cake
Allow to cool in the pan for five minutes before removing and placing on a wire rack to cool completely.
Once cooled, place the cream and tablespoon of sugar into a cold mixing bowl and whisk on high until you have stiff peaks.
Spread the jam over the top of one of the cakes then pipe the whipped cream over the top.
Place the sliced strawberries on top of the cream then lay the other slice of cake on the top.
Sprinkle with powered sugar and you can also pipe a little more of the whipped cream on top and decorate with a few more sliced strawberries
