Using a paring knife, cut the top off each bell pepper and carefully remove the seeds and white membranes.
Cut out a jack-o’-lantern face on the front of each pepper.
To make the guacamole, place the chopped avocados and tomatoes into a food processor with the lime juice, red onion, and chili. Pulse until combined but still slightly chunky. Season with salt and pepper.
If not serving immediately, place the guacamole in a bowl, tuck one of the avocado stones in the center, and cover tightly with cling film to prevent browning.
Fill the carved peppers with guacamole or hummus and serve with vegetable sticks and chips.
