Peach Prosecco Cocktail
I thought it fitting to add in this bright and fresh cocktail to my Miami theme. Enjoy!
Ingredients
- 2 fresh peaches with the stones removed
- 8-10 fresh mint leaves
- 4 tbsp fresh lemon juice
- 12 tbsp brandy
- 1 cup prosecco
- Ice if required
- Additional peach slices for garnish.
Instructions
- In a pitcher, place the lemon juice, brandy, peach halves and mint leaves, stir and chill for a minimum of two hours.
- Strain into champagne glasses, add a fresh peach slice to each glass then top with the prosecco.
- Garnish with a sprig of fresh mint.
