Perfect Pancake Breakfast Board

A brunch-worthy spread with fluffy homemade pancakes, vibrant berries, and all your favorite toppings. Sweet, simple, and perfect for sharing.

Ingredients

For the fluffy pancakes:

  • 1 cup all-purpose flour 120g
  • 1 tablespoon sugar
  • 2 tablespoons baking powder
  • 1 large egg room temperature
  • ¾ cup milk 180ml
  • ¼ cup butter melted (60g)
  • ½ teaspoon salt

Other ingredients for the breakfast board:

  • 2 cups fresh strawberries 300g
  • 1 cup fresh raspberries 125g
  • 1 cup fresh blackberries 145g
  • 2 bananas peeled and sliced
  • 1 pot plain Greek yogurt approx. 170g
  • 1 cup chocolate hazelnut spread 300g
  • ½ cup peanut butter 125g
  • 1 cup chocolate chips 175g
  • 1 cup fresh raspberry sauce 250ml
  • 1 stick cold butter sliced (115g)
  • 1 cup maple syrup 240ml

Instructions

Method for the pancakes

  • Combine the flour, baking powder, sugar and salt in a bowl.
  • Combine the egg, milk and melted butter in a jug.
  • Stir the wet ingredients into the dry ingredients. Do not over mix.
  • Grease a griddle pan over medium heat and pour ¼ cupfuls of the batter onto the griddle.
  • Wait until bubbles form on the top of the pancake before flipping over to brown the other side.

Other ingredients for the breakfast board

  • Lay the pancakes down the center of the board and surround them with the berries and bananas.
  • Place the bowls of the peanut butter, yoghurt and chocolate spread around the board and the stick of sliced butter on one end.
  • Place the maple syrup and raspberry sauce on opposite ends of the board
  • A breakfast masterpiece!!!
