Pineapple Ginger Refresher

Tropical, sweet and zingy - perfect for a healthy summer refresh!

Ingredients

  • pounds fresh pineapple peeled, cored, and cut into cubes (680g)
  • Juice of 1 whole lime
  • cups water 600ml
  • 8 oz fresh ginger peeled (225g)
  • ¼ teaspoon salt
  • 1 cup honey 340g
  • Sparkling water for serving

Instructions

  • Using a rolling pin smash the ginger then add this to a blender with the pineapple, salt and two and a half cups of water.
  • Blend until smooth then pour through a sieve into a pitcher.
  • Stir in the lime juice and four cups of boiling water then stir in the honey.

  • This can be enjoyed hot but I like to chill it for at least an hour then serve with some sparkling water, ice and a slice of fresh lime.
