Preheat the oven to 350ºF / 180º and grease a 13 x 9 baking tin with cooking spray. Sift a little all purpose flour into the greased tin and shake to coat all sides
In a medium bowl beat together the butter with the two cups of sugar until light and fluffy.
Add the eggs one at a time followed by the lemon juice and vanilla and mix until combined.
In a separate bowl mix together the dry ingredients of flour, gelatin, baking powder, baking soda and salt.
With the mixer turned to low slowly add in a little of the flour mixture followed by a little of the buttermilk and alternate until all the flour and buttermilk has been incorporated into the butter and sugar.
Stir in the mashed strawberries then pour into the prepared baking tin.
Sprinkle over the chopped strawberries then bake in the oven for around 30-40 minutes until a toothpick inserted into the center of the cake comes out clean
Add the remaining tablespoon of sugar to the sliced strawberries, mix and set aside.
Once baked fully, remove the cake from the oven and allow to cool completely.
To make the cream cheese frosting place the cream and cream cheese into separate bowl.
Beat the cream cheese until light and fluffy.
Add the vanilla extract to the heavy cream and whisk until you have soft peaks. Gradually add in the powdered sugar one serving spoon at a time whilst continuing to whisk. Beat until the cream forms stiff peaks.
Fold the whipped cream into the cream cheese.
Spread the cream cheese frosting over the top of the cake then top with the sliced strawberries, then try to restrain yourself from eating the whole thing to yourself!!!
