3cupsof pineapple cut into one and a half inch chunks
4red and orange bell peppers cut into one inch pieces
3tbspof sweet chili sauce
2tbspof red wine vinegar
Salt and pepper for seasoning

Instructions
Soak the wooden skewers in cold water for one hour before starting.
Preheat a grill pan over a high heat and brush or spray with cooking oil.
Taking a skewer, thread the chicken, pineapple and peppers alternatively until the skewer is full then set aside until you have completed threading all skewers.
Place into the grill pan and cook for approximately three minutes per side.
To make the sauce, in a bowl mix together the chili sauce and vinegar and season with salt and pepper.
Brush the sauce over the skewers and turn to coat the other side. Cook for a few minutes more until the chicken is cooked through and the pineapple golden.
