Place the butter and sugar into a stand mixer and beat until smooth and creamy
Add the eggs one at a time, scrape down the sides of the bowl if required
Add in the vanilla extract and mix until combined
With the mixer on low speed, add in the flour gradually until fully combined and smooth
Separate the dough into halves and shape into two 6 inch logs then wrap in greaseproof paper and place in the fridge to chill for a minimum of four hours.
When ready to bake, preheat the oven to 350f and line three baking sheets with baking parchment
Cut the logs into slices and arrange on the baking sheet at least one inch apart
Bake in the oven for around 10-12 minutes
Allow to cool on the baking trays for a few minutes before transferring to a wire rack to cool completely
