In a medium skillet, heat a little flavorless oil over medium heat and brown the ground beef.
Drain off any excess fat, then stir in the salsa, taco seasoning, and chopped chilies if using.
Bring to a boil, then reduce the heat and simmer for about 5 minutes.
Toast the waffles and place them onto a platter.
Top each waffle with shredded lettuce, some of the beef mixture, chopped tomatoes, and diced avocado.
Sprinkle over cheddar cheese and finish with a tablespoon of sour cream.
