Key Lime No Bake Cheesecake
The refreshing citrus flavours of this cheesecake make it the perfect summer dessert - and you don’t even need to bake it!

Ingredients

oz
reduced fat cream cheese
room temperature (57g)

key lime juice

crushed graham crackers

melted butter

teaspoon
vanilla extract

powdered sugar

frozen whipped dessert topping
thawed in the refrigerator (480ml)

of key limes
for garnish
Instructions
In a small bowl mix together the crushed crackers and melted butter.
Spoon into the serving glasses and press down with the back of a spoon to compact.
To make the filling, using an electric whisk mix the cream cheese, lime juice and vanilla extract. Add in the powdered sugar and whisk util smooth.
Fold in just half a cup of the whipped topping before adding in the rest and folding to combine.
Spoon into a piping bag and pipe into the serving glasses over the top of the biscuit base.
Chill until ready to serve and top with a sliced of lime.
