Cottage cheese pancakes

- Skillet
Ingredients
- 1 cup all-purpose flour 120g
- 1 cup cottage cheese 225g
- ½ teaspoon vanilla extract
- 2 eggs
- 2 tablespoons maple syrup 30ml
- 1 teaspoon baking powder
- ¼ cup whole milk 60ml
- Pinch of salt
Instructions
- Mix together the cottage cheese, eggs, syrup, milk, and vanilla extract.
- In a separate bowl mix together the dry ingredients of flour, baking powder, and salt.
- Add the dry ingredients into the wet ingredients and stir until the flour is no longer visible. If the mixture is too thick, add a little more milk.
- Grease a skillet and heat over medium heat. Using a ¼ cup measure, scoop the batter into the skillet.
- Allow to cook for a few minutes on one side and once set and golden on the underside, use a spatula to flip to cook the other side.
- Serve immediately with fresh berries and maple syrup or go savory with bacon and scrambled eggs.
Notes
- You can substitute the bananas with berries for a different twist.
- Serve with extra chocolate sauce and whipped cream for that extra indulgence.
- Keep the pancakes warm in the oven while you cook the rest!
