Artichoke Dip and Crispy Tortilla Chips
Ingredients
- 225 gr cream cheese at room temperature
- ¼ cup sour cream
- ¼ cup mayonnaise
- ⅔ cup grated parmesan
- ½ cup grated mozzarella
- 1 14oz can of artichokes in water or brine chopped
- 170 gr frozen spinach thawed and excess liquid drained
- packet of tortillas
- olive oil
- parmesan for sprinkling
- salt and pepper
Instructions
- Preheat the oven to 190oc and spray and baking dish with a little cooking oil.
- In a bowl mix together the cream cheese, sour cream, mayonnaise, parmesan, pepper and mozzarella.
- Stir in the artichokes and spinach.
- Spread the mixture into the baking dish and bake in the oven for around 20 minutes until melted and bubbling.
- Meanwhile, slice some flour tortillas into chip sizes and place onto a baking tray. Drizzle with olive oil, season with salt and cracked black pepper then sprinkle with parmesan.
- Place in the oven to crisp for around 6-8 minutes.Serve with the dip.
