Some nights just call for soup – quick, cozy, and made with whatever’s hanging out in your fridge or pantry. That’s exactly where this Chicken Tortellini Soup comes in. I threw it together on a chilly weekday evening with a rotisserie chicken and some frozen veggies, and let me tell you… It tasted like it had been simmering all day. The creamy broth, cheesy tortellini, and tender chicken are just the kind of comfort food magic you need when time’s short but cravings are big. You’ve got to try this one – dinner in 15 minutes never felt (or tasted!) so good.
Chicken Tortellini Soup
Ingredients
- 64 fl oz of good quality chicken broth 1.9 liters
- 12 oz of small fresh cheese tortellini 340g
- 1 lb shredded rotisserie chicken 450g
- ½ cup of heavy cream 120ml
- ½ cup of grated parmesan 45g
- 10 oz bag of frozen mixed vegetables 280g
- 1 tablespoon cornstarch
- Salt and pepper to season
Instructions
- Mix the cornstarch with one tablespoon of water and set aside.
- Heat the stock in a large saucepan over medium heat until it starts to boil then add in the frozen vegetables. Allow to cook for a few minutes.
- Add in the tortellini and allow to cook for 3–5 minutes until starting to soften.
- Add in the rotisserie chicken and season with salt and pepper.
- Add in the cornstarch and water.
- Stir and allow the chicken to heat through and for the cornstarch to begin to thicken the soup.
- Add in the heavy cream and stir well before finally adding in the grated parmesan and stirring until combined and incorporated into the hot liquid.
- Serve in bowls with extra parmesan and some freshly baked croutons.
