English Victoria Sponge Cake

If you are English, then without a doubt, this will have been a regular feature in your kitchen over the years. Perfect with a cup of tea!

Ingredients

  • 1 ⅓ cups of  self raising flour
  • ¾ cups of white sugar
  • ¾ cups of butter softened
  • 3 eggs at room temperature
  • 1 tsp of vanilla extract
  • ½ cup of strawberry jam
  • 1 cup of heavy whipping cream
  • 1 tbsp of white sugar
  • 1 cup of  fresh strawberries sliced

Instructions

  • Preheat the oven to 375 degrees F
  • Grease and line two round cake tins 
  • Sift the flour into the bowl of an electric mixer then add in the sugar, softened butter, vanilla extract and eggs.
  • Divide the mixture evenly between the cake pans and smooth the top.
  • Place the pans into the oven and bake for around 30 minutes until a toothpick comes out clean when inserted into the center of the cake
  • Allow to cool in the pan for five minutes before removing and placing on a wire rack to cool completely.
  • Once cooled, place the cream and tablespoon of sugar into a cold mixing bowl and whisk on high until you have stiff peaks.
  • Spread the jam over the top of one of the cakes then pipe the whipped cream over the top.

  • Place the sliced strawberries on top of the cream then lay the other slice of cake on the top.

  • Sprinkle with powered sugar and you can also pipe a little more of the whipped cream on top and decorate with a few more sliced strawberries

  • Time to put the kettle on and make that cup of tea!!!
