There’s something about Halloween that brings out the kid in everyone – the costumes, the laughter, and of course, the sweet treats. And these eyeball cake pops? They’re a total crowd-pleaser. Super simple, no baking required, and so much fun to decorate. Honestly, this is one of those recipes where the messier they look, the better!
What I love most about these is how hands-on they are. You can set up a decorating station with bowls of melted candy, red gel, and candy eyes, then let everyone create their own spooky masterpiece. The little ones will love rolling the cupcake mix into balls and dipping them into the melted coating – just try not to eat half of them before they’re decorated!
The secret shortcut here is starting with frosted cupcakes instead of cake mix. It keeps things wonderfully moist and saves so much time. Once rolled and chilled, you’ll dip them in silky white candy melts and let the decorating magic begin. A swirl of red gel creates that perfect “bloodshot” effect, while a candy eye or a piped chocolate pupil gives them just the right amount of creepy charm.
They set beautifully and hold their shape, which makes them great for serving on a Halloween buffet table or wrapping individually for party favors. Whether you make them with the kids or prep them as a surprise for the big night, they’re guaranteed to disappear fast – just like magic!
So grab your lollipop sticks, melt your candy, and get creative. These eyeball cake pops are the ultimate treat for spooky season – equal parts eerie and adorable.
Eyeball Cake Pops
Equipment
- Baking Sheet
- lollopops sticks
Ingredients
- 4 large frosted cupcakes any flavor you choose
- 1 bag of white candy melts
- Red gel for decorating
- Eye cake decorations or disc-shaped candy for the eyes
- Chocolate frosting if using candy discs for the eyes
Instructions
- Crumble the cupcakes into a bowl and mash together with your hands. Place in the freezer for fifteen minutes to firm slightly.
- Line a baking sheet with parchment paper and roll 1-inch sized balls with the crumbled cakes, ensuring they’re compacted well.
- Lay onto the baking sheet and insert a lollipop stick into the center of each one. Pop back into the freezer for ten minutes to chill.
- Melt the candy melts in the microwave. Dip each cake pop into the melted candy and allow any excess to drip off before setting back onto the baking sheet.
- Once set, use a little more of the candy melt to stick the candy disc or eye to the front of each cake pop. Use the red gel to make bloodshot eyes.
- If using candy discs for the eyes, use the chocolate frosting to pipe the pupil in the center of each eye.
- Allow to set, then serve.
