Grilled Peach Delight
Taking peaches to a whole new level of deliciousness. Grilling them enhances their sweet flavour. This makes a perfect breakfast or light summer dessert to share with friends and family.
Ingredients
- 6 peaches
- 2 tbsp runny honey
- 75 gr crunchy granola
- 1 handful goji berries
- zest and juice of half an orange
- olive oil
- plain Greek yoghurt
Instructions
- Slice the peaches into segments.
- Heat a griddle pan on a high heat.
- Brush both sides of the peaches with a little olive oil then place into the hot griddle. They will sizzle immediately.
- Place the honey and orange juice and zest into a small saucepan and heat until boiling then turn down the heat, stir for a minute or two then remove from the heat.
- After a couple of minutes turn the peach slices over to griddle on the other side.
- Take a large serving platter and place the griddled peaches down first. Drop the
- Greek yoghurt over the peaches, sprinkle with the granola then pour over the sweet sauce.Top with the goji berries and enjoy!
