Waffle Tacos
Equipment
- medium skillet
- Sharp knife
Ingredients
- 1 lb ground beef 450g
- 1 box 8 frozen waffles
- 1 cup salsa 240ml
- 2 cups shredded lettuce 90g
- 1 cup shredded cheddar cheese 115g
- 1 envelope taco seasoning
- 6 tomatoes chopped
- 4 avocados diced
- Sour cream for serving
- 1 can chopped green chilies optional (4 oz / 115g)
Instructions
- In a medium skillet, heat a little flavorless oil over medium heat and brown the ground beef.
- Drain off any excess fat, then stir in the salsa, taco seasoning, and chopped chilies if using.
- Bring to a boil, then reduce the heat and simmer for about 5 minutes.
- Toast the waffles and place them onto a platter.
- Top each waffle with shredded lettuce, some of the beef mixture, chopped tomatoes, and diced avocado.
- Sprinkle over cheddar cheese and finish with a tablespoon of sour cream.
