Cheesecake is my son’s favorite dessert and this one never disappoints. It’s sweet, airy, and has that distinct key lime tang – honestly, heaven in a bite. The best part? No baking needed, so it’s perfect for summer days when you don’t want to turn on the oven. An easy, fresh, and creamy no bake cheesecake with the zing of key lime.

Key Lime No Bake Cheesecake

The refreshing citrus flavours of this cheesecake make it the perfect summer dessert – and you don’t even need to bake it! 
Servings 6 -8 portions

Total Time 20 minutes

Ingredients

  • 2 oz reduced fat cream cheese room temperature (57g)
  • 2 tablespoons key lime juice
  • cup crushed graham crackers 85g
  • 1 tablespoon melted butter 14g
  • ½ teaspoon vanilla extract
  • ¼ cup powdered sugar 30g
  • 2 cups frozen whipped dessert topping thawed in the refrigerator (480ml)
  • Slices of key limes for garnish

Instructions

  • In a small bowl mix together the crushed crackers and melted butter.
  • Spoon into the serving glasses and press down with the back of a spoon to compact.
  • To make the filling, using an electric whisk mix the cream cheese, lime juice and vanilla extract. Add in the powdered sugar and whisk util smooth.
  • Fold in just half a cup of the whipped topping before adding in the rest and folding to combine.
  • Spoon into a piping bag and pipe into the serving glasses over the top of the biscuit base.
  • Chill until ready to serve and top with a sliced of lime.
