It’s zesty, sweet, and has that gentle heat from fresh ginger that makes each sip feel like a little pick-me-up. Whether you’re serving it chilled over ice with sparkling water or sipping it warm on a breezy summer evening, it’s packed with natural goodness from pineapple, lime, and honey. Oh, and did I mention it’s full of anti-inflammatory benefits too? Summer wellness in a glass!
Pineapple Ginger Refresher
Equipment
- Blender
- large pitcher
Ingredients
- 1½ pounds fresh pineapple peeled, cored, and cut into cubes (680g)
- Juice of 1 whole lime
- 2½ cups water 600ml
- 8 oz fresh ginger peeled (225g)
- ¼ teaspoon salt
- 1 cup honey 340g
- Sparkling water for serving
Instructions
- Using a rolling pin smash the ginger then add this to a blender with the pineapple, salt and two and a half cups of water.
- Blend until smooth then pour through a sieve into a pitcher.
- Stir in the lime juice and four cups of boiling water then stir in the honey.
- This can be enjoyed hot but I like to chill it for at least an hour then serve with some sparkling water, ice and a slice of fresh lime.
