Strawberry Sheet Cake with Cream Cheese Frosting

This strawberry sheet cake with cream cheese frosting is the ultimate summer dessert—easy, fruity, and totally irresistible. A perfect comfort food treat.

For the cake:

  • 3 cups cake flour 360g
  • 1 cup unsalted butter softened (227g)
  • 2 cups sugar 400g
  • 1 tablespoon sugar 12g
  • 3 extra-large eggs
  • ¾ cup buttermilk 180ml
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons strawberry gelatin
  • ¼ teaspoon salt
  • ½ cup fresh strawberries sliced (75g)
  • ½ cup fresh strawberries chopped (75g)
  • ½ cup fresh strawberries mashed (75g)

For the cream cheese frosting:

  • 1 packet 8oz cream cheese softened (226g)
  • cups heavy whipping cream 360ml
  • 1 teaspoon vanilla extract
  • cups powdered sugar 150g

Instructions

  • Preheat the oven to 350ºF / 180º and grease a 13 x 9 baking tin with cooking spray. Sift a little all purpose flour into the greased tin and shake to coat all sides
  • In a medium bowl beat together the butter with the two cups of sugar until light and fluffy.
  • Add the eggs one at a time followed by the lemon juice and vanilla and mix until combined.
  • In a separate bowl mix together the dry ingredients of flour, gelatin, baking powder, baking soda and salt.
  • With the mixer turned to low slowly add in a little of the flour mixture followed by a little of the buttermilk and alternate until all the flour and buttermilk has been incorporated into the butter and sugar.
  • Stir in the mashed strawberries then pour into the prepared baking tin.
  • Sprinkle over the chopped strawberries then bake in the oven for around 30-40 minutes until a toothpick inserted into the center of the cake comes out clean
  • Add the remaining tablespoon of sugar to the sliced strawberries, mix and set aside.
  • Once baked fully, remove the cake from the oven and allow to cool completely.
  • To make the cream cheese frosting place the cream and cream cheese into separate bowl.
  • Beat the cream cheese until light and fluffy.
  • Add the vanilla extract to the heavy cream and whisk until you have soft peaks. Gradually add in the powdered sugar one serving spoon at a time whilst continuing to whisk. Beat until the cream forms stiff peaks.
  • Fold the whipped cream into the cream cheese.
  • Spread the cream cheese frosting over the top of the cake then top with the sliced strawberries, then try to restrain yourself from eating the whole thing to yourself!!!
