Snowball Coconut Macaroons
Fluffy, light and delicious. These snowballs will light up any Christmas event!
Ingredients
- 150 gr desiccated coconut
- 200 gr shredded coconut chips
- 1 tsp Nielsen Massey Pure Vanilla Extract
- 2 large egg whites room temperature
- 550 gr condensed milk
- Pinch of salt
Instructions
- Preheat the oven to 170oc.
- Mix together the coconuts, condensed milk, salt and vanilla in a bowl.
- Mix the egg whites in an electric mixer until they form firm peaks then fold into the coconut mixture.
- Using an ice cream scoop, drop the mixture onto a lined baking sheet.
- Place in the oven for 30 minutes until perfectly toasted on top.
