A creamy, crunchy chicken salad that’s worlds better than any store-bought version. Quick, fresh, and perfect for warm days or light lunches.

Before moving to the States, I had no idea chicken salad was such a big deal. Now? I’m completely converted – and this version is creamy, crunchy, and so much better than anything you’ll find in a supermarket or a deli case. It’s the kind of dish you’ll want on repeat, especially when you need something easy and satisfying.

Perfect Chicken Salad

Equipment

Ingredients

  • ½ cup mayonnaise
  • 2 cups shredded rotisserie chicken 260g
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup chopped celery 60g
  • ½ cup sliced almonds toasted (45g)
  • Romaine lettuce leaves

Instructions

  • In a bowl stir together the mayonnaise, lemon juice, salt and pepper. Add in the chicken, celery and almonds. Toss to coat every thing.

  • Lay large romaine lettuce leaves onto a platter and fill each one with the chicken salad.

  • Add a little cracked black pepper and serve.
