Who says you need meat for a rich and hearty meal? This dish is packed with fibre, full of vegetables, and perfect for winter. I adore chickpeas, and while they’re great in salads, this recipe is my go-to for something comforting during the colder months.

Chickpea Ragú Served with Lentil Rice

This chickpea ragú is a robust, plant-based dish that’s full of depth and comfort. Tender chickpeas simmered in rich tomato sauce and vegetables to make a satisfying meal. It’s perfect for a winter dinner.

Ingredients

  • 1 Onion finely diced
  • 2 carrots finely diced
  • 3 celery sticks finely diced
  • 800 gr chickpeas drained and rinsed
  • 690 gr passata
  • 2 springs fresh thyme
  • Salt and pepper to season
  • Olive oil

Instructions

  • Heat a few tablespoons of olive oil in a wide-bottomed pan over medium heat. Sauté onions, carrots, and celery for about 10 minutes until soft
  • Stir in chickpeas, followed by passata, and mix well.
  • Add thyme sprigs and season with salt and pepper.
  • Simmer for 45 minutes until the vegetables soften, and the sauce reduces by two-thirds.  
  • Serve with lentil rice or your preferred rice variety.
