Chickpea Ragú Served with Lentil Rice
This chickpea ragú is a robust, plant-based dish that’s full of depth and comfort. Tender chickpeas simmered in rich tomato sauce and vegetables to make a satisfying meal. It’s perfect for a winter dinner.
Ingredients
- 1 Onion finely diced
- 2 carrots finely diced
- 3 celery sticks finely diced
- 800 gr chickpeas drained and rinsed
- 690 gr passata
- 2 springs fresh thyme
- Salt and pepper to season
- Olive oil
Instructions
- Heat a few tablespoons of olive oil in a wide-bottomed pan over medium heat. Sauté onions, carrots, and celery for about 10 minutes until soft
- Stir in chickpeas, followed by passata, and mix well.
- Add thyme sprigs and season with salt and pepper.
- Simmer for 45 minutes until the vegetables soften, and the sauce reduces by two-thirds.
- Serve with lentil rice or your preferred rice variety.
