Spicy Fried Tofu

This is the quickest weeknight dinner packing a punch of flavour – vegan never was easier.

Ingredients

  • 250 gr hard tofu
  • 1 inch piece fresh ginger
  • ½ tsp cumin powder
  • 3 tbsp tamari
  • olive oil
  • 1 tbsp fresh coriander chopped

Instructions

  • Cut the tofu into cubes.
  • Grate the ginger then add to a bowl with the tamari, cumin and coriander.
  • Leave to marinate for at least 15 minutes.

  • Heat a large pan over a medium/high heat and cover the base with olive oil then fry the tofu until crisp and golden.

  • Serve with sautéed red onions and sugar snap peas.
