Valentine’s Day Sugar Cookies with Buttercream Frosting
These are delicious crumbly sugar cookies that melt in the mouth and topped with the best ever buttercream frosting which elevates them to a whole other level.
Ingredients
Cookies:
- 4 cups self raising flour
- 1 cup softened butter
- 2 cups sugar
- 3 large room temperature eggs
- 2 tsp Nielsen Massey Pure Vanilla Extract
Buttercream Frosting:
- 5 cups powdered sugar
- 5 tbsp double cream
- 3 tsp Nielsen Massey Pure Vanilla Extract
- pinch of salt
- 12 tbsp cool diced unsalted butter
Instructions
Cookies:
- Place the butter and sugar into a stand mixer and beat until smooth and creamy
- Add the eggs one at a time, scrape down the sides of the bowl if required
- Add in the vanilla extract and mix until combined
- With the mixer on low speed, add in the flour gradually until fully combined and smooth
- Separate the dough into halves and shape into two 6 inch logs then wrap in greaseproof paper and place in the fridge to chill for a minimum of four hours.
- When ready to bake, preheat the oven to 350f and line three baking sheets with baking parchment
- Cut the logs into slices and arrange on the baking sheet at least one inch apart
- Bake in the oven for around 10-12 minutes
- Allow to cool on the baking trays for a few minutes before transferring to a wire rack to cool completely
Buttercream Frosting:
- Place the butter into a stand mixer with the paddle attachment fitted and beat until soft and creamy – this will take around five minutes
- Turn the mixer to low then gradually start to add in the powdered sugar and mix for two minutes more – you will have a very thick mixture at this stage
- Add in the cream one tablespoon at a time, you may need slightly less or slightly more so take it slow and add it as required as you mix
- Add in the vanilla extract and salt and mix for 20 seconds more to fully combine
- Separate the buttercream into bowls and add gel food colouring as required
- Be sure to spread immediately onto the cookies as it does start to harden quite quickly
- This will set on top but remain soft underneath – delicious
