Vegan Rice Pudding

The warming spice of nutmeg and sweet soy milk makes this vegan rice pudding the most wonderful dessert. I actually even make this for breakfast.

Ingredients

  • 750 ml sweetened soya milk
  • 50 gr sugar
  • 100 gr pudding rice
  • 15 gr vegan margarine
  • 1 tsp ground nutmeg

Instructions

  • Heat the oven to 160oc and grease a 1.5l oven proof dish with vegan margarine.

  • Place the pudding rice, nutmeg and sugar in a large baking dish and mix well.

  • Pour over the milk and mix again.

  • Place in the oven for around two hours until the rice is soft and creamy and the top is set and golden.
