- 1 kg new potatoes halved
- 3 tbsp olive oil
- 1 tbsp Dijon mustard
- sea salt
- cracked black pepper
Preheat the oven to 200oc.
Mix the olive oil and mustard in a bowl and season with salt and pepper.
Toss the potatoes in the oil then tip onto a baking sheet.
Place in the oven for 35-45 minutes until golden, crisp and tender.
