Egg bites are such a lifesaver on busy mornings, and this version of salty, crumbly feta and sweet peas gives them so much flavor, and they’re such an easy low-carb option for busy mornings. Whether you’re having them fresh out of the oven or grabbing one from the fridge later, they’re just plain delicious.

Pea and Feta Cheese Egg Bites

These Pea and Feta Cheese Egg Bites are a quick, low-carb breakfast packed with protein and seasonal flavor. Perfect for meal prep or an easy brunch!
Servings 2 people
Total Time 25 minutes

Ingredients

  • 6 large eggs
  • 4 oz 115g crumbled feta cheese
  • 1 can of sweet peas 8 oz / 227g , drained
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375ºF / 190ºC and grease a muffin tin.
  • Beat the eggs and season with salt and pepper.
  • Add in the drained peas and stir.
  • Pour evenly between six muffin holes in the tin.
  • Top with ¾ of the crumbled feta cheese then place in the oven to bake for 15-20 minutes until the eggs have set and a toothpick inserted into the center comes out clean.
  • Remove from the tin and sprinkle over the remaining feta cheese.
