Cashew Coconut and Date Bars
Another recipe from my superfoods book and always popular in my house.
- ½ cup raw almonds
- ½ cup raw cashews
- ½ cup shaved coconut
- 15 dates pitted
- coconut oil
- Line a square tin with greaseproof paper.
- Pulse the almonds and coconut in a food processor then add the dates and pulse until combined.Add the cashew nuts and a tablespoon of coconut oil and pulse againThe aim is a thick sticky mixture so you may need to keep adding more coconut oil until you reach this.
- Pour into the baking tin then cover with another piece of greaseproof paper and flatter down and make smooth.
- Chill for 30 minutes then remove and slice into bars.
