A favourite recipe from my Superfoods book and in my house. The perfect healthy snack bar for anytime of the day and great pre or post workout.

Cashew Coconut and Date Bars

Another recipe from my superfoods book and always popular in my house.

Total Time 10 mins

Ingredients

  • ½ cup raw almonds
  • ½ cup raw cashews
  • ½ cup shaved coconut
  • 15 dates pitted
  • coconut oil

Instructions

  • Line a square tin with greaseproof paper.
  • Pulse the almonds and coconut in a food processor then add the dates and pulse until combined.
    Add the cashew nuts and a tablespoon of coconut oil and pulse again
    The aim is a thick sticky mixture so you may need to keep adding more coconut oil until you reach this.
  • Pour into the baking tin then cover with another piece of greaseproof paper and flatter down and make smooth.
  • Chill for 30 minutes then remove and slice into bars.
