Baked Barbecue Chicken
This baked barbecue chicken recipe really is finger licking good.
Ingredients
- 1.5 kg chicken thighs and drumsticks
- 2 sliced white onions
- 350 gr tomato ketchup
- 200 gr light brown sugar
- 60 ml apple cider vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp molasses
- ½ tsp onion powder
- ½ tsp mustard powder
- 1 tsp salt
- 120 ml water
Instructions
- Mix all ingredients except the chicken and onions together in a large bowl. Blitz in a blender until smooth if you prefer a smooth sauce.
- Remove about one quarter of the sauce then add the chicken to the rest. Cover and place in the fridge to marinate for a few hours or overnight.
- Heat the oven to 200ºc.
- Place the sliced onions onto a foil lined baking tray. Drizzle with olive oil.
- Place the marinated chicken skin side up on top and cover with foil. Bake in the oven for 40 minutes then remove from the oven.
- Turn the grill on.
- Brush the chicken with the reserved barbeque sauce and place under the grill until the chicken is crispy and browned and the sauce bubbling.
