Baked Barbecue Chicken

This baked barbecue chicken recipe really is finger licking good.

Ingredients

  • 1.5 kg chicken thighs and drumsticks
  • 2 sliced white onions
  • 350 gr tomato ketchup
  • 200 gr light brown sugar
  • 60 ml apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp molasses
  • ½ tsp onion powder
  • ½ tsp mustard powder
  • 1 tsp salt
  • 120 ml water

Instructions

  • Mix all ingredients except the chicken and onions together in a large bowl. Blitz in a blender until smooth if you prefer a smooth sauce.

  • Remove about one quarter of the sauce then add the chicken to the rest. Cover and place in the fridge to marinate for a few hours or overnight.

  • Heat the oven to 200ºc.
  • Place the sliced onions onto a foil lined baking tray. Drizzle with olive oil.

  • Place the marinated chicken skin side up on top and cover with foil. Bake in the oven for 40 minutes then remove from the oven.

  • Turn the grill on.
  • Brush the chicken with the reserved barbeque sauce and place under the grill until the chicken is crispy and browned and the sauce bubbling.
