Sautéed Sweetcorn
If you're looking for the best way to cook corn off the cob, try this recipe for sautéed sweetcorn, the simplest possible side dish recipe and one of my favorites.
Equipment
- Mixing Bowl
Ingredients
- 4 corn on the cobs
- 2 red onions diced
- 1 green or orange pepper diced
- 1 tbsp butter
- olive oil
- salt and pepper
- Parsley to garnish
Instructions
- Heat a couple of tablespoons of olive oil in a frying pan on a medium/high heat and add in the shallots. Cook for around five minutes until softened.
- In the meantime using a sharp knife, remove the kernals from the corn cobs. Add into the pan with the butter then add in the pepper.
- Continue to cook over a high heat for another five minutes until cooked through then serve with sprinkling of parsley.
