Sweet and Sticky Chicken Skewers
These sticky chicken skewers with juicy with pineapple and bell peppers are such a hit in our house. Sweet, savory, and just 15 minutes to make! Perfect for grilling season.
Equipment
- Mixing Bowl
Ingredients
- 1.5 lb chicken tenders cut into 1.5 inch chunks
- 3 cups of pineapple cut into one and a half inch chunks
- 4 red and orange bell peppers cut into one inch pieces
- 3 tbsp of sweet chili sauce
- 2 tbsp of red wine vinegar
- Salt and pepper for seasoning
- Wooden skewers
Instructions
- Soak the wooden skewers in cold water for one hour before starting.
- Preheat a grill pan over a high heat and brush or spray with cooking oil.
- Taking a skewer, thread the chicken, pineapple and peppers alternatively until the skewer is full then set aside until you have completed threading all skewers.
- Place into the grill pan and cook for approximately three minutes per side.
- To make the sauce, in a bowl mix together the chili sauce and vinegar and season with salt and pepper.
- Brush the sauce over the skewers and turn to coat the other side. Cook for a few minutes more until the chicken is cooked through and the pineapple golden.
- Serve with brown rice
